Picked young and green, this is the classic Thai chilli used fresh in green curry, som tam, stir-fries and dipping sauces — sliced thin, or pounded whole into a paste. The same variety left to ripen further turns red and gets even hotter, but most Thai cooking calls for it green.

What happens next

Sowing

5mm deep in seed-raising mix. Chillies need warm soil to germinate well — aim for 25–30°C, using a heat mat if needed.

Germination · 10–20 days

Be patient — cold soil is the most common reason chilli seed takes far longer than expected, or seems to fail outright.

Pot on & harden off

Move seedlings into their own small pots at 2–3 true leaves. Harden off over a week before planting out.

Plant out

Only after all frost risk has passed. Full sun, free-draining soil, 40–50cm spacing.

Growing on

Water deeply 2–3 times a week rather than a light daily splash. Feed every 2–3 weeks once flowering starts — go easy on nitrogen or you'll get leaf, not chillies.

Harvest · 75–90 days

Pick while green and firm for the classic Thai flavour and heat. Stake the plant once loaded — a heavy branch snaps easily in wind.
