A staple of Thai and South-East Asian cooking — used sparingly, whole or sliced. Wear gloves when picking and prepping, keep it well away from your eyes, and store it out of reach of children.

A general guide only — chillies are frost-tender, so your local frost dates have the final say. In subtropical and tropical zones plants often crop for more than one season.

Seed to harvest

What happens next

Sowing

5mm deep in seed-raising mix, keep evenly moist and warm.

Germination · 10–21 days

Hold the soil at 25–30°C. A heat mat makes a big difference in cool weather — Thai chilli can be slower and less even to germinate than milder varieties.

Transplanting

Harden off for a week, then plant out 40–45cm apart in full sun.

Growing on

Compact, bushy and productive — does well in the garden or a decent-sized pot. Water deeply and regularly, feed with a balanced fertiliser, then switch to potassium-rich once flowering starts.

Flowering & fruit set

Pods form in dense clusters along the branches. Watch for aphids, whitefly, mites and fruit fly.

Harvest

Pick green for a sharper, grassier heat, or leave to ripen red for the classic Thai chilli colour and flavour. Save seed from your best pods for next season.
